what color is the smoke? and exactly where is it coming from, the engine bay or the exhaust? I'm assuming coming up through the louvers/out the engine bay since it doesn't do it with the fan on? If so, you probably have something leaking onto the exhaust system, whether it be on the manifold, x-over, etc

Valve cover gaskets.Might as well do them while changing the x-over pipe. That is, if it is not coming out the exhaist. If it is in the exhaust, you have other issues.

Assuming that it is coming from under the hood as you say it doesn't when the fans are on...most likely you have a bad oil-pump drive O-ring and it is working it's way down to a hot spot and smoking. The valve cover gaskets are pretty sturdy, but the O-ring on the oil pump drive always dries to a brick and leaks like a $2 whore during Mardi Gras!!
