Recently after sitting for a while and "fiddling" with the engine I finally am back to just about DD'ing the ole cruiser. 
After installing an oil temperature gauge, I noticed under normal driving the temps stay around 190?F and 210?F, but under high load it will reach 250?F . 
Now with a 60% water & coolant 40% mix adding a new: 180? T-Stat, brand new water pump, radiator, lines/hoses, & heater core blah blah blah I know it's just related to what upgrades that have been done/installed.  Without going into that, I want to know IF I were to install a 160? T Stat, will it help drop the temps so I dont have to worry about thinning and breaking down my oil all to often without causing other issues that might just be an old wives tale?

My coolant temps do not reach above 190?F, ever.  Although, I do notice when my fans dont kick on and my coolant temps are around 185-189 the oil temps will be creeping to the 250 mark.  As soon as the fans click on the oil temps drop to 180-210 range and will stay there until high load & 189?F coolant temps peak again with fans off. 
I want to not run my fans 90% of the time while driving it, so I figure if I can lower the oil temps a few degree along with coolant temps, I should achieve the goal.
These oil temps are at the pan, so generally the oil will be hotter throughout the rest of the motor. 

Also note, that installing an aux oil cooler isn't what I want to really do with the limited space I have now...  But winter is coming so I might find room for one somewhere  :icon_neutral: .

Is the chip your running have the fan scedule adjusted for the 180 stat? You could also rewire that second fan to come on with the main fan. I found it funny the way GM wired the 2 fans. Or if you don't want to reprogram a chip you could control the fan outside of the computer. Advance auto sells a kit to wire up an electric fan and you can adjust it turn on point. About 50 bucks. or I found a web site a while ago that offered a piece of hose with an set point sensor in it and you cut it into the lower hose to turn on a relay http://www.alumrad.com/index.html look under the electric fan section. If you live up north I wouldn't go with a 160 might have heat problems if you drive it in the winter. Plus if you don't change the fan scedule the fan still won't come on until the same temp as now.

I have the chip set for (IIRC) 181F , but the sender might not be seeing that temp as my other (added) sender sees.  I do have the fans on a switched circuit for the 'just in case' times or if I want to cool it down faster for engine shut down.  using the fans less is my ultimate goal.  This car will probably never see Winter temps ever again, as soon as snow hits, storage here it comes!  lol 
I might just try a 160 stat. since it'll be the smallest most easiest thing I can do without having much down time.  Does anyone have the part number for the correct 160 temp thermostat for autozone, advance or murrays?

I checked at most of the local parts stores and they say unavailable or 10 day wait.  Too top it off, 15.99 for a stinking 160 temp stat!  Does any previous vehicles come stock with the 160?  If so, what are they?

I swear the parts store around here don't ever have what I want when I want it most.  Also, whats with the high price with the 160?  I can get anything but the 160 for 5.99 all day long...

because they figure the 160 is a performance item and mark the price up.  thank marketing for that one!  Just have Autozone special order one for you at least you won't pay shipping like if you order it at summit or something.

The hypertech part # is actually 1005. Advance Auto should still be able to order them, they were around $13-14 + tax last time I bought one.

meh i wouldnt run a stat that low, you wont atomize the fuel as well, oil wont get as hot and may not boil out all the contaminates like gas and moisture, poorer gas mileage, and increased engine wear from not operating at its correct temp....
