I was going to look into getting KYB struts, only question I really have is do strut mounts really matter, can I just get cheap ones, or should I get ones to go with the struts?

but they don't have a front assembly on there, only cartridge.
the front mounts hold the bearing, and more than likely will come apart during replacement, so plan on replacements. The rears should be done, especially if the car is making that strange knocking sound on bumps, plan on replacements.
The fronts can actually be done with the strut assembly in the car, it comes right out the top. The rears dont have springs on them, because of the leaf spring.
You will need to rent the autozone tool to get the fronts out.
well I see the rear KYBs have a spring on them, what's up with that since our cars have the leaf spring? I plan on just bringing it to my buddy to do it cuz he has all the tools and whatnot and can do it a lot easier than I can.

seems as though thats a generic picture. That is actually a front assembly pictured for the rear. The rear is a cartridge and a mount. No spring.
Fronts need to have the springs swapped over, or you can replace them with the car on the ground by using the gm strut removal tool.

So what type of shocks should be used when replacing Monroe or kyb?
Depends:
Monroe = Stock
KYB = Sport

If you're referring to the excels including in those assemblies, KYB lists them under the same "level" on their website. I would guess the excels probably have more of a stock strut feel(not quite as harsh as the GR-2's) though. The price on that complete assembly doesn't look bad at all.
