Are there any stronger/better aftermarket chains out there?
Also, how hard would it be to replace?  If it isn't too much work, I might do it- if not, forget about it. :icon_cool:

The stock timing chains are fine. ;) I wouldn't bother with replacing the timing chain until you're approaching 200,000 miles. I've only heard of one 3.1 timing chain breaking below 200,000 miles(some guy on the W-body board had one break at 167K) for what it's worth. All the other broken timing chains I've seen snapped above 230,000 miles...

Are these NON interference engines?

they are interference. there was a lot of debate for a while but if people are getting valves crushed then I don't see how they couldn't be. don't worry about it, they don't break easy. I've read of more problems with aftermarket ones with low miles than stock ones with high miles.

work wouldn't be too bad but it's no fun if you don't really have to.

I put a full roller timing chain in the motor I am building I DONT RECOMMEND this to anyone, I basically spent 1 day grinding out the water pump housing for it to fit.  Stock is just fine and if I ever build anouther 3.1 motor (doubtfull) I'll use stock.  Just my 2 cents ;)
